Did the byzantines and medieval eastern orthodox in general have any poetry or philosophy? Who is their Dante? Who is their Aquinas?

Church fathers are vital part of the canon; they are as follows: Athanasius of Alexandria, Gregory of Nazianzus, Basil of Caesarea and John Chrysostom. Justin Martyr for apologetics, try any compendiums about the lives of the saints which are canonised in the Eastern Church, The Golden Legend, I think, is a western text but contains saints deemed by the Orthodox too.

For any poems (if I remember it as that correctly) check out The Way of the Pilgrim and The Pilgrim Continues His Way for a narrative about the Jesus Prayer, and other secular poets like the satires of Lucian,

You're right that the monks of Mount Athos are not a monolith. There are political struggles there all the time and the state of Greece persecutes monks of certain monasteries who are inconvenient to their agenda.

That being said I've seen very little of any Orthodox converts supporting Russia. Never in real life and only a few times online.
