Can someone recommend me a book with a simple story that doesn't go anywhere? The hero doesn't learn anything, there isn't any deep meaning or anything behind it. Just comfortable nonsense that doesn't go anywhere

It was an indictment of the debtor's prison system. How does one not see that? It's the entire point of it. Did you even read it? The irony is that there was so much momentum of nothing of great import happening, that a man so innocent as Pickwick finding himself suddenly being prosecuted was shocking. PG Wodehouse is a good answer since there isn’t some deeper meaning involved but there are certainly stories. Sounds like you’re looking for more of a Waiting for Godot type experience as far as the content goes but even that has too much meaning. Ulysses and In Search Of Lost Time would probably fit your bill but people will reply to say they’re deep and meaningful. You can see the world in a grain of sand if you try hard enough.
