This is like asking: how times do I have to lift a weight in order to get buff? Surely lifting 300lbs ten thousand times will most likely get you there, but nobody really thinks about it that way. Also, lifting a 2 lb dumbbell (reading pulp garbage) ten thousand times will never get you to such a goal, so just saying “read 1000 books” is not effective advice.

Just read and think about classic works, philosophy, and other literature consistently for several years and you will eventually become well-read.
