I want to check them all, but which series of them should I start with? I'll stick with the author that has the best starting book.

The only one from the three worth reading is Gene Wolfe and I'd recommend Fifth Head of Cerberus. It's 3 novellas so you can easily quit after any of them and it's a good way to see if you like what you are reading. It's a good showcase of his general style. Bakker and Sanderson are not capable of producing anything decent and there's really no good reason to spend time on them, unless you really want Naruto in form of 6 novels.
