Calderon, Gracian, Quevedo, Juan de la Cruz, Jorge Manrique, Ines de la Cruz, Leon de Greiff, Teresa de Avila, Fernando Gonzalez Ochoa, Miguel Delibes and Gustavo Becquer. Those are the ones i really like, there are other greats such as Gongora and Lope de Vega but don't find them as enjoyable.

If you spend a couple hours a day studying Spanish, you will (likely) reach a level very quickly where you can study other topics in Spanish. The primary subjects that I study are math and music theory, and I learn German as well. After a few months of German learning, I transitioned almost completely to studying math with German language material (books and online lectures), and soon after I did the same with music. Time spent deliberately learning a language is lame, but with immersion it becomes fun!
