i would recommend you read some of the greeks, also ovid definitely has a much more broad sense of genders in his description of certain immortal figures. honestly twisting the juice of my lemon here trying to wring out a worthwhile glass, but nonbinary is, whilst not a new theme, is certainly not a particularly popular one, the only other works i can think of that might approach it are things like middlesex, or woolf's Orlando, but i doubt they really apply. i definitely recommend a walk through more ancient gardens, more oblique texts, perhaps some of the occult, as they often disrupt tradition for its own sake, good luck in your pursuit, i do not really find that hatred fits the spirit of literature, and for this i apologize for the state of this board in their callous treatment of your request.

( it is still eminently worth reading ) and after a second glance at it, i definitely recommend middlesex, considering its themes and its overwhelming popularity. i have not read it, but i'm fairly confident it will at least be a good launching point for research, source texts, works similar to and inspired by, and i'm sure that the author themselves will have a great deal of information about works to that end. as to gender theory, the only thing that comes to mind for me is foucault, as well as the beat generation of literature, allen ginsberg, burroughs, they certainly were modern enough to touch the subject. unfortunately in this case i'm really not experienced in the theme, but hopefully i've been of *some* help. again, good luck to you.
there are also probably a large number of poets that handle the topic, so try not to ignore that field during your research.

She’s not non-binary since she still identifies as a girl, but in the light novel series Kino’s Journey the main character Kino typically refers to herself by name only without choosing the title boy or girl. I think the Japanese text still uses female grammatical structure when referring to her.

The Gods Themselves by Asimov is half about aliens with a 3-gender system and some level of biological fluidity iirc.
I, Robot by the same is mostly about nongendered robots, who are arguably the overall heroes of the story.
I don't know if those work for you since they're not on-the-nose or about fitting in socially with the rest of society, but it's early attempts at challenging people to relate to characters who don't fall into the comparatively strict norms of the time.
I think there's some good examples from LeGuin too but their names escape me.
