Just got a kobo clara 2e and its asking to setup an account. Was wondering If I setup an account through my desktop with a 10 min email and just never turn the wifi on on the ereader, will that work? I'm not planning on buying any books from their store, will it ask me to connect it to my desktop and use the kobo app for updates or anything?

Yes, it will work. Once you get past the setup you never need to use the account or wifi again. There's probably even a way to skip it now.

Download your books to your computer and sort them with Calibre, doesn't matter what ereader you get, just turn on airplane mode and import your books via usb.

I went with Kobo because I didn't want to pay extra to remove lock screen ads on Kindle. Plus Kobo has out of the box EPUB support, you have to convert them for kindles.
Also, the z-library telegram bot still works. Just send it the books ISBN and it'll send you the EPUB.

Anyone outside of US can buy a cheaper kindle with ads, then ask Amazon support to disable them. They will do it as a "one-time exception". Just be nice to pajeetas.
That being said, Kindles are best for people who like their app settings to consist of no more than 3 options. Cutting-edge Amazon software gives us such incredible abilities as

this blog tells you how to bypass login for the clara hd. you can probably do the same thing on the 2e but you should backup the original koboreader.sqlite first.

Depending on the Kindle and software version, you can install KOReader on it. Spend the ten to fifteen minutes, channel your inner /g/entooman and be an autist in menus for a little bit. It's worth it.

I already did on my PW 11. But since most people prefer to buy new devices directly from Amazon, they won't be able to jailbreak any of them with the exception of Oasis. Pw and basic Kindles are now sold only with unbreakable firmware.
