I've only read Baker's City of Towers and it was bland and predictable. Although it did well in creating a sense of wonder in this strange magical city. So it helped me build out my dnd world, but holy shit the read was a slog.

Bakker spoiler regarding Lord K, do not read if you havent finished THE SLOG OF SLOGS

Kosoter isn't dead and neither is it the first time he has died.

He was the "man with the iron eyes" dressed as a beggar, the one who drenched himself in oil and and kept the Thing That Called Itself Sarcellus (the guy's skin eater doppelganger, dont remember the exact name) in his kamikaze embrace while Kellhus' other assassin fired the flaming arrow at them. During the brief exchange between him and Not-Sarcellus, he even admits to being Zaudunyani and despite looking like a beggar at first, Not-Sarcellus immediately recognizes something wrong with his "iron eyes". The thing says that despite looking battered as fuck, this was a man who was doing the battering to others or something along those lines.

When he leads the Skin Eater's expedition into Cil-Aujas, they reach depths so far below the surface that they end up on a literal lake of lava (while being hunted by Sranc and other monsters). Sarl starts crying and laments how fucked they are because they've walked into literal Hell (with the lava everywhere etc). Kosoter just says that this was definitely not hell and when Sarl asks how he knew, Kosoter answers "Because I would remember". Kosoter is also known by the name "Ironsoul" (see iron eyes above)
Sarl and Mimara talk about how Kosoter's soul bounces back from the afterlife and that the Captain simply doesn't go to hell, even after being killed by his men near Sauglish. Sarl might look like an insane maniac 99% of the time, but there is some low key prophetic quality to him that shines through between the lines. So, is Kosoter really ded?

Just a theory tho.

I'm fascinated by the idea of how governments choose objectives, then structure their organisation to meet those challenges. The development of new technological capabilites is especially interesting.
Of course we have real-life examples of the Manhatten Project or Oxcart etc, but I enjoy thinking about OoCP like an alien invasion. Blindslight by Peter Watts is a really good example.
These ideas don't need to be an extended infodump, that's largely up to the skill of the author.
My ideal book would be a series of near future hard sci-fi where humanity has to effectively restructure society and in order to survive an existencial threat, dusting off plans for Project Orion, SDI or Marauder
as well as creating new technologies that wither away for lack of funding or patent hoarding.
