What should I read as a beginner who hasn't read a book in 15 years? I'm not that interested in harry potter like fantasies or anything "easy to chew".

You don't need to go "easy to chew" but by the sound of it you have a long backlog of relatively "easy to chew" stuff anyway so there's no reason to go ultra-snooty. The world is your oyster, you can read anything and get something out of it. But since you are asking:

Just try to remember your highschool reading list. If you read them as an adult on your own, they're easier to appreciate. Maybe some Shakespeare, maybe some Steinbeck. Short fiction and novellas are probably best.

I suggest you start with Of Mice and Men. Short book, the language isn't terribly difficult, but by no means is it bad. It's a great book to start with analyzing characters and themes.
