Surely there are some titles or authors you've heard of that you're kinda curious about, just pick one of those and start there. It's better to have intrinsic motivation than to let someone else tell you what to read.

just cause you posted jandek i'll give you some recs.
old man and the sea by hemingway is very short and doesn't have very complex language but still has strong symbol themes that will say with you after finishing it.
the story of art by e h gombrinch is similarly a digestible read for its subject matter and it is half pictures of art. seeing that you know about jandek art history might be your thing.

really just try to read every day. that's all it takes to finish any book.
