Thats a very good question.
Of course it depends on your personal taste and mostly your historical interests, but I would say the most interesting german literature comes from the time where germany had its golden age. So 18-19th century (Plus the start of the 20th).
Romanticism is a great place to start. Novalis, Eichendorff or ETA Hoffmann are some of the Best right there.
