Why is "a guy meets a girl" so popular in literature?

Because in most cases it is the most exciting thing to happen to everyday people and fictions first priority is to make readers identify with characters which is best done by manipulating that link. Its also a very marketable trope because glorifies those common human relationships to something more than they would otherwise be.

That's it. That's everything.

That's why only two things really matter, sex and death. "Boy meets girl" is sex. Classical tragedy is death. Everything else is an offshoot of one of those two things.
