You just can't have a top three. Samuel, Psalms, Job, Daniel, John, Revelations, etc. Too much greatness.

Listen to Jordan B. Peterson's biblical series where he reads Genesis from a psychological perspective. My favorite is Cain and Abel. If you read it yourself it can appear to be a simple story but it has a profound depth to it that is often missed.

Dude everything Peterson said is like C-tier Biblical exegesis. Just pick up a study Bible or another scholarly work analysing the Bible instead, they'll provide Peterson's ideas with greater nuance and more accurate details/context, as well as several other alternative and/or complimentary readings.
Especially look at Jewish exegesis, those dudes have spent millenia masturbating over these writings.

I like a Bible in its entirety. I wish there was more known of the gospels of Mary and Thomas, and that they were included in standard bibles.

I am currently reading KJV front-to-back, and am now at Ester 3. Esther 2 was a ride, I made some assumptions as to what Ahasuerus did with the virgins in his room but thought that I am not the one to make assumptions about it, as 'I've been around', as Tupac Shakur would say. The concluding part of Esther 2 bothered me a bit because killing people by hanging is against the Law of Moses.

This exemplifies a theme of the Bible: Rulers and people who forget founding laws and guidances. It's something every person can connect with on an individual level, because how many times do we have to be steered onto the correct path before we understand and can change our behaviours? In a certain sense, when you look at it from an evolutionary perspective, every time we abide to God's earliest laws we change in a way as to come closer to God, so it helps to keep reading Bibles, whichever version, and remind ourselves of the journey and what we can do to stay close to God.

Books/chapters of the Old Testament that draw my attention are currently Genesis and Exodus, because those contain the primary rules for diet and society. I like the New Testament in its entirety, I like reading.

I also like reading Bibles in different languages. The Dutch HSV has a book called 'Hooglied' which is about marriage, and is not found in the KJV. It is interesting to read for a not-married man, and provides hope for the future.
