Most people these days do not realize that green eggs are a thing and it is not mold. Farm fresh eggs turn green after a few weeks if they are not refrigerated. Perfectly fine to eat if cooked properly, the smell is not great and the texture/taste is different, but they are not exactly bad. I am not sure if there is a green ham or it was just a literary device.

I used to live in a cabin with no electricity. The taste and texture is not really an issue, duck eggs have a different taste and texture. The smell can be dealt with in various ways if it bothers you. As long as an egg has never been refrigerated it does not need to be refrigerated. Just keep them somewhere dry and do not wash the bird gunk off until you are ready to use them.
