Achilles. And as Dan Simmons' other books show, since he was recreated by the Post-Human dieties and dipped in the probability stream, the Shrike actually can't hurt him. He can slice all he wants, but the wave functions of his body will avoid Achilles, who can even kill the Gods if Hector doesn't get him.

He doesn't seem like much at first glance, but with all the weird time fuckery, interdimensionality, Abaia's plot armor, and probable immortality after Urth, Severian from BotNS could probably hold his own for a time.
Dunno who my all time favorite literary character is though.
