I was looking to buy War and Peace, The Brothers Karamazov and Meditations coming up in the near future.

Which versions and publishers should I look out for? Which should I avoid?

You can usually look up reviews and different versions are sorted by publishers and versions. If there is a different isbn number or an older version. It's most likely been edited. If you want to figure out if it was censored you will have to do your research. I doubt it matters much outside of controversial novels like Lolita. You can figure that out through context like finding the book on banned book lists etc.
