Would a good writing strategy be to write a 2-3 page short story every day to get better? I've never written outside of creative writing assignments in school but I think it would be a fun creative hobby to try

Yes, it is a good idea. Ray Bradbury said something similar — you should write one short story every week for a year. At least one of them is going to be decent. "I defy anyone to write fifty-two terrible stories," he said. "It can't be done."
