when writing a non-fiction text (for school) I like to write the ideas I get thinking about the topic/source and riff them into full fledged paragraphs. Is that an acceptable method? I feel like it's unprofessional but I never bothered to really learn the academic way

Do whatever works for you. There are no rules.

Books about writing generally boil down to a survey of techniques that have worked for other people, then say "do what works for you".
