What are some works of literature that concern a perceived deterioration in cognitive ability/judgment during periods of illness/nervous excitement? I can no longer bear this tortuous metacognitive cycle without some sort of outlet to relate to.

Your problem is that you are not willing to, and/or have never needed to, take things into your own hands by proactively commiting to, or searching for, an "outlet" into which you could offset your vexation; reading —which, in your case, has been reduced to consumption, rather than educed to sublimation— presently will only worsen your symptoms.
