I started to write down random dialogues between random normies i hear in bus, i want to later use it as skeletons for some short stories maybe bigger narrative. I am using single pen and paper but they talk too fast. How do you manage in similiar circumstances?

Based, I do the same. I don't write it all down, just the most important topics and the basic personality of the normies that I can gather from their talks. Loved doing this at university, fucking Covid ruined that.

Dialogue isn’t supposed to even close be realistic in books. You aren’t writing a movie. Read Narcissus und Goldmund to see how good dialogue does not have to be realistic. Real conversations are fucking boring when you read them back anyway. Also read The Sunset Limited and then watch the movie, you will notice that even though the dialogue was fine when you read it, it comes off as stilted crap when it’s being played out. Also, have you ever watched a shakespeare play performance? Try comparing that to real conversation. Trying to base your dialogue off real conversation is the most retarded thing you could possibly do.

Dialogue in literature and film is very different from real life--many stops and starts, stutters, um's etc. It'd actually be unintelligible written out; tons of work goes into editing interviews before they're published.

You're right to listen for people's words though! But just try picking out one phrase or bit of body language and go from there. You can use facts for structure (what're they wearing, do they have jobs, etc.)
