Which LotR edition is best?

Any of the one-volume editions. It was written as a single novel and that is how it should be read.

The originally unused covers that Tolkien drew himself. The Hobbit one was used, but the LotR covers were not issued until like 97 I think. He did draw the 1950s cover of the rings but it was a lot more minimalist and they all basically had the same cover.

That edition is probably the best. It's not my favorite, but if you aren't a fan looking for a particular edition I'd recommend that one.

Those are all Tolkien's art. The problem is they were never meant to be over art. The Two Towers cover art was actually from the Hobbit. I can't remember if it's Mirkwood or the Old Forest, but it actually has Biblo. The Return of the King cover was Baradur. He made watercolors for fun, but yeah it's not supposed to be a cover.

I wouldn't mind having a nice set but I hate the idea of buying copies of books that I already have. I have mass market editions and I bend the shit out of them on rereads in the secret hope that they'll fall apart.
