Books on dictatorship? I just read pic related and it left me wanting given that it was mostly a historical work with very little theory developed.

Why don't you like theory?

What’s to theorize about?
The weak feel a need to bully vast numbers into submission as some sort of dick measuring contest. It certainly isn’t for protection and safety. These social actions only bring out animosity and adversaries and more fighting.
This is why soft dictatorships and deceptive dictatorships were invented.

Try Pareto or Mosca. Personally, I recommended Mosca: The Ruling Class (1939). If you want something easier and more contemporary, try Smith/Mesquita: The Dictator's Handbook (2011).

Coup d'Etat by Luttwak is great, full of practical advice.

Is this actually good? I'm always skeptical of book covers which have this modern mass market sort of look.

I read this last summer and really enjoyed it. I'd recommend doing a thorough reading of Leviathan.
