Are there any books that explain the psychology of reddit-tier new atheists, the ones who claim to be super rational/logical and that all religion is dumb and evil, and are likely to quote Richard Dawkins?

Robert Sapolsky: Behave (2017) has useful information for a lay-reader, and Taleb typically has anti-enlightenment-activist views scattered throughout his oeuvre. Really though, the prime movers (Dawkins, Hitchens, Dennett, Harris) are the ones to read if you want first-hand understanding.

Stephen Jay Gould repurposed NOMA in 1999 (Rock of Ages), which Dawkins dismissed in The God Delusion (2006). That would be a good place to start.

Idk, it's hard to really understand the new atheist movement if you weren't a kid in the 90's and didn't grow up in a very religious but not very intellectual family.
I think the psychology is just being naturally curious and wanting answers.
