This. I can never finish a book because once the book starts to get even a bit boring I think about the other book I could enjoy and on and on it goes.

I think its a problem of the digital age. Back in the day I would actually spend a decent amount of time in deciding what books to buy and then I would read all of them, both to get my money's worth and also because I didn't have anything else to read either. But now people don't have to do any deliberation before starting a book, as they can download it for free, and they have no qualms in leaving it unread midway through, because they have infinite amount of reading material just a click away, and also an unread ebook doesn't lie around your room, meaning you probably won't pick it up again after a week and finish it.

I would say the solution is to be more deliberate with your reading. Before downloading a book on your kindle, look at the blurbs and introduction and maybe the reviews, really whatever you would check for a physical book. And use a book cataloguing service (like Goodreads or librarything) and add books to the "Reading right now" shelf. You gotta keep track of your reading if you don't want to be swimming for eternity in a sea of half-read ebooks.
