They were put on paper later but that's the thing with oral traditions: if the paper written in greece says that same stuff than the paper written in two other countries then you can assume that the oral tradition was preserved (doesn't mean it's true, but it's preserved).
If the guy who writes it down needs to destroy evidences of the surates he doesn't like as being incorrects then proclaims his version the only true Quran, you can have your doubts.
