I think Plato's works should be part of the Scriptures.

He can be considered an essential part of the historical process of revelation of God. Thanks to his influence, the Israelites changed their understanding of YHWH, that they previously saw only as a possessive and jealous despot, and started appreciating His rationality that reveals itself in the mathematical beauty of the physical world.

You're right that he is deeply influential... but his work should still not be included as scripture, because it is not scripture. Plato's works also have many references to Greek religion, which conflicts with Christianity. Plato even develops his own cosmogony that is wholly incompatible with the Christian cosmogony.

Still, people should be highly encouraged to read Plato to fully understand Christian thought in Christian culture and history.

What Philo did, for example, when he took the task to present Jewish theology and the Torah in a more philosophical way was to provide an open understanding to the hellenic world, to show what lies behind this dumb literalism of yours but of which many people are prey.
