Ernest Hemingway's short stories are pound-for-pound better than his novels. Flannery O'Connor's short stories are very good too. William Faulkner's short stories are great if you want to get a sense of his style without the full-blown autism of his novels. Jorge Luis Borges is most well known for his short story collections (mainly Ficcones), but Penguin has a nice edition that has all of his short stories in one volume

Pastoralia by George Saunders was surprisingly really good. Can't go wrong with Chekhov

Roald Dahl

if you like carver you are obligated to read gordon lish (im not saying youll like him, only the most patient can handle his autism) he has edited carver and basically made his style into what it is (you can look up the unedited versions, theyre very amateurish) carver owes what he is to lish. but his own stuff is very niche and stupid (still my fav writer) and a bit harder to find but if youre interested in the limits of language and stupidity try mourner at the door or his collected fictions.

but if you want to read a straight up great short story collection, just go with nine stories. sallinger has influenced both carver and lish and nine stories works very well as a cohesive work too.
