Best book (although it isn't really a book) that there is.

If you only have time for one book in it, make it John and read it in the KJV.

Otherwise, read the Old Testament in the NRSV or ESV and the NT in the Authorised Version (KJV). You can also read it in the NRSV or ESV.
Basically, just use a respected translation that you enjoy reading and isn't going to make it hard. Apart from the ones already mentioned, the NIV is also acceptable.

AVOID the NKJV or translations like the Message. This is not just my preference, they are bad.

Genesis 1-11 is probably the most "essential" bit of the OT, especially for Narrative stuff. The OT poetry is great (Psalms, etc.)
My favourite part of the OT is probably Ezra-Nehemiah, when the exiles return to Israel and immediately declare that only they are the real Israel.

For the NT, start with the Gospels.
You could read Acts after Luke if you want because they were written together.
Mark is the shortest Gospel and was probably the first to be written so it's a good one to start with.
After the Gospels, the Acts and then the Pauline letters. If you have time for just one and you're just reading for pleasure, read the letters to the Corinthians. Otherwise, Romans.
