Whats the fast lane for reading the New Testament so I can acquire important cultural background knowledge? I've seen college syllabi that only have Matthew and John as required reading. Does /lit/ agree with this?

Read the whole thing. Don't be lazy. It's not that long.

If you really have to half-ass this thing (you don't), make sure to include John, Matthew, Acts, Romans, Corinthians and Revelation. But then again, don't be a zoomer, fight your attention spam, read the whole thing. Not to say that if you want real background knowledge, you shold at some point go all the way through from Genesis to the end. But that's a bigger adventure, so for now maybe stick to the New Testament.

I would recommend reading all of it. At a stretch you can maybe skip Mark because Matthew is basically an expanded version of Mark, and 2 & 3 John which don't affect doctrine and are very short anyway.

Matthew is for plebs, John is for well read individuals that can recognize symbols.
