Where should I start? Where should I stop? I hear the early ones were pretty meh and the last ones really went off the rails what with his illness and all.

The night watch books are the best in my opinion but all of them are fun reads.

Some of the standalone books are definitely the strongest in the series imo (The Truth and Small Gods are fucking great)

I love TP, but he tends to fall in love with his characters a bit too much over the time so his stuff is better with freshly-baked ones. Vetinari >>17241750 is a solid example of this, with his infalibilty and utter ability for control and insight growing novel by novel, but even Vimes -who was created specificlaly as a heavily flawed everyman- has gained literal bona fide super powers by his last appearance
