I'm very interested in Christianity, specifically Orthodoxy. What is some essential reading for this? What version of the bible?

If you are truly interested, why don't you find your local orthodox church and as the father/pastor there. They would be more than happy to help you. You need to read the bible first before stepping into the fathers, because you'll lack the context for their writings. God bless.

Essential Readings: Any of the Church Fathers. I like the very Early ones like Justin Martyr and Ignatius of Antioch and Augustine, but the Greek ones like Gregory of Nyssa and Basil the Great are also good. Also, the Philolaika.

Version of the Bible: Anything that's not the KJV (i.e. at least includes deuterocanonical books like 1/2 Maccabees, Sirach, Tobit, Wisdom, Baruch and Judith). If it includes those books, then you are guaranteed it is free from errors within the actual Scripture itself (like there are massive translation errors and omissions of many verses in the KJV Bible). It then becomes a question of whether you want the Orthodox Bible and the Catholic Bible, the former also includes books like 3/4 Maccabees, which Catholics consider pseudo-graphical (not because it's heretical per se. More that it doesn't really add much to Scripture in their eyes).

Please don't fight over the internet over shit that isn't even saving souls. If anything Orthodoxy and Catholicism are the two Christian traditions that have the highest likelihood of reconciling in the near future. Pope Francis concelebrated a Mass/Divine Liturgy in Havana with Patriarch Kiril and also with the Pope of the Coptic Church at some other time. Stop this LARPy bullshit and

If you believe in Christianity you must believe in Christ. Jesus said Peter is the rock on which he builds his Church. Catholicism is the only true Church.

You have a pretty shallow grasp on biblical texts if you don't know they have been meddled with throughout history.

In order to understand Orthodoxy you must be born in an orthodox county and raised in an orthodox family by orthodox parents. It's a spiritualism that cannot be learned within one or two generations. Try Catholicism instead.

I would recommend the short book "Beginning to Pray" by Fr. Anthony Bloom, and the KJV or Orthodox Study Bible. If you get a chance, watch his CBC interview from the 70s about suffering.

I'm sure you can find enough works with strict definitions and lists, but for the spirit I'd recommend reading Leskov's “On the Edge of the World”. You can try to find
https://books.google.ru/books?id=vJ_Tyja4VAQC
in a nearby library (reading the preface and notes is possible in Google Books preview with multiple attempts and clearing cookies), or use the century-old translation that is readily available thanks to the wonder of mass digitization
https://archive.org/details/NikolaiLeskov-SentryAndOtherStories/page/n203/mode/2up
It is also a Christmas story of sorts, so it's even more suitable.

In many ways, Leskov is more “Russian” than famous Russian classics. He sketches the provincial life, and his characters, like the inhabitants of a village hidden deep in the forest in a faraway land, speak in most comfiest ways (alas, how do you translate that?). Check the “Cathedral Folk”, “Enchanted Wanderer”, or another collection of Christmas stories:
