Please someone post something I can read that will help write essays better? The way I word things sounds like a 9 year old doing a book report. I don't know how to make it seem like an adult wrote it.

is english your first language? if not, its only natural that your command of the english language wont be great.
Regardless, read more challenging lit written in the language you try write essays in.
However, I believe that your problem is not your language proficiency per se, but your reasoning. Simple language is great because It makes things accesible.( See Hegel vs Schopenhauer)
Focus on your line of arguments first, then language.
In case your language skill is in fact atrocious( which it isnt probably, if you try writing in your mother tongue) than work on aquiring higher skills first in your target language.

I was recommended these two;
Oxford Guide to Plain English,
New Hart's Guide: The Oxford Style Guide

Hope it helps :)
