If you can concede there's one and only one biological difference between races then this is just flimsy. How could it be that races have evolved to have different skin, for different evolutionary purposes but be totally genetically identical otherwise? Because they're not, beyond skin tone we can observe other physical and cognitive that correlate with race and are genetically heritable. But for some reason (ideology) we're not allowed to apply taxonomy to humans as we do to every other species.

You can classify race by looking at the Fixation Index, which is a measure of genetic distance and clusters. If you think people can't define race, you clearly haven't been looking very hard.
The fixation index between Central Europeans and Sub-Saharan Africans is 15.3%. The fixation index between different subspecies of wolf is 9.9%. Europeans mostly cluster together but the biggest divide is between Africans and everyone else. This information is uncontroversial and can even be found on wikipedia.
