It's not fantasy, but you might like Musashi by Eiji Yoshikawa. Epic samurai story based on the life of Japan's best swordsman.

Ah, yeah. It's very Wuxia. Has a lot of the foundations in it that would go on to influence video games like Age of Wushu. Beggar's Sect. Taoist swordsmen. Meridians and pressure points. Internal kung fu and external kung fu. Very archetypal.

A more literary chinese book that has a lot of folklore in it that I'd recommend is Red Sorghum by Mo Yan
