wtf is the deal with Plato's number? He explains the five forms of government and all of a sudden launches into this explanation of cyclical history and this cryptic esoteric mathematical riddle that apparently hasn't been solved yet. Was Plato an Egyptian alien?

Numbers are very important in Plato. The universal is supposed to be numerically divided in a precise way. Read Timaeus.

You should also keep in mind that Plato didn't really write the evil demon known as systematic philosophy and the various topics of the republic flowed naturally through the "plot" though obviously Plato kind of wanted to talk about them to explain his views

It's a joke. Socrates asks Glaucon right before that passage (545d-e) if they should invoke the Muses like Homer to describe how the cities degenerate. Glaucon and Socrates at 547a indicate that the whole nuptial number speech is what the Muses would say. A similar math joke is used later by Socrates to show how many time happier the king is to the tyrant.
