Well the main villains of the trilogy are corrupted men and elves, bar the grand evil behind it.
While the good is described as light the evil is described as dark.
The men who oppose Rohan, Gondor, the Freemen etc. (who are all Anglo-Saxons, Byzantines, Germanics etc.) are the Haradrim (Arabs) and Easterlings (Turks).
The elves are those of European mythology, white skinned, fair hair, etc.
The Orcs are the inverse.

The Haradrim and the Easterlings aren't evil, they've just been subjugated by Sauron. There is no inherent flaw in their racial constitution. In fact saying so would condemn all the "white" ethnicities too, since they had been subjugated in the same manner in the past. Furthermore, at no point they're desribed as being part of a different race. They're as human as the citizens of Gondor (and this can be argued by referring to the Silmarillon's cosmogony: all humans are borne out of the same ontological, divine principle - and the elves are borne from another principle, and the orcs from another too).
Also your taxonomy doesn't account for the difference between elves and Middle Eartherns. Are they both white? Then why are they two different races? What difference are they analogous for?
Lastly, the reference to the light-darkness dyad is far older than the modern racial white-black dyad. It is more likely that it was an inheritance from Christian and pagan imagery, rather than a reference to racial taxonomy.
