If you need some kind of "special program" for writing you are not going to make it. I write in Libre Office, which is literally just an open source copy of Word. You absolutely should not need some fancy, special, "boutique" writing processor. You can bang out your manuscript in something widely available like the rest of the plebs. If you're truly good enough, you won't care.

I've been using google docs, but I'm annoyed at how anything over 50 pages lags like a motherfucker.

you can only edit the colors so much, it's janky as fuck to do it and fucks up the document itself instead of just being the overlay, and you can't easily make it fully dark with light text

Focuswriter, Zenwriter, Ommwriter, Writebox browser editor (syncs with your Dropbox) and/or Jotterpad on your phone. I edit in LibreOffice.
