If I believe that “God” is everything in existence, not limited to or excluding this universe, and we are all part of the One, what religion/texts does that most line up with? I assume something like Buddhism? I really don’t know help me out pls, thank you in advance

I wouldn't say that. For Neoplatonists, everything ultimately flows from the One. If you're a good Platonist, even matter is constructed from the forms (see the Timaeus). The problem is that by that point, our perception of the material is as distant from the true reality of the One as can be. As for the Gnostics, even the demiurge and the material world he made ultimately derive from the pleroma, but even if we except the material from that, our souls do stem from pleroma and will return if we free ourselves from bondage to matter. Same is true for the Neoplatonists.
