Why did Irish folk tales have so much christcuck stuff in them?

Because Irish mythology and folklore was preserved and transmitted orally prior to the arrival of Christianity.
It was only really when Christianity arrived, that these stories were written down and codified into manuscripts. Naturally, some Christian influence found its way into these tales, and in some cases, it can be obvious when these changes were inserted into the source material.
For instance, there's a version of the Tir na nÓg story, where Oisín meets St. Patrick before he dies.
