why is the dude so shocked the books are real

ive read the book twice but for some reason that sticks out to me like
why is it so shocking the books arent cut up

It's been a few years since I read it, but I thought the books in Gatsby's library weren't real? They were supposed to be either fake display books or real books that showed no signs of having ever been opened/read.
They were ultimately just decoration to Gatsby maintain his aristocratic masquerade.

In the 19trh and early 20th century it was common practice for publishers to sell books with temporary bindings. If the owner of a book liked the book, he would often choose to rebind it to a new casing, leather bound usually, and if the pages were too large or wide, it would be cut down.
Gatsby's library are filled to the brim with books that have no visible wear on there temporary bindings and he has no books he rebinded himself. Showing he was not an avid reader.
It's something that needs a bit of historical context to understand. I had to look it up as well because I wasn't sure what the term meant when I first read it.

A book is printed on one big sheet of paper which is then folded, bound, and folds cut to form the pages. These days this is all done by the printer, but it used to be that you would have to do the cutting yourself. New book would look like pic related, and you would literally have to cut the pages to be able to read it.
