You add a book and then press the view button at the top. Or you right click on an ebook, choose open with, then find the calibre e-book viewer shortcut.

No, you quite literally can't do that most of the time. Scanned PDFs are just a bunch of images, and the only way you can get the text is with OCR software, which isn't perfect, nor can it format things properly all the time (especially if a word is cu-
t off at a line at some point)
Just download epubs and if you have a PDF, just put the whole PDF on your ereader. Better to struggle a little with the size than to have to put up with some ungodly nightmare where you have a bunch of random fucked up symbols in your text, especially when the letters may have originally had diacritics.

I made a couple of sharethreads taking requests to do proper conversions and some have been fulfilled already.
If anyone has some book that's only available as PDF that fits the following criteria I'd be willing to try to do a proper conversion. I'm looking for fiction (novels, short stories), up to mid length (500 or so pages), preferably obscure and dark/depressing books. It should have some literary merit from a canon viewpoint (by this I mean I don't want to waste time with self published schizo stuff).

Love how it can autoconvert epubs to kepubs (kobo proprietary epub format that has faster page switching/loading and reading stats) only on transfer to my kobo so I don't distort my original files.
