I wanted to try to read what Buddhists were saying about Plato and Aristotle and Kant (because I was interested in how they read the West) and honestly it was the most arrogant claptrap: they were so very convinced that the ravings of that ancient idol were correct, and that therefore Plato and Aristotle and Kant COULD NOT be correct. They did not follow even the most basic principles of charitable interpretation, but instead they uttered only arguments of the following form.

Plato says X
But X contradicts the claims of Buddhism.
Therefore Plato is wrong.

Literally this argument repeated over and over.

In person Buddhists are somehow even worse: I tried to argue with a Buddhist in my class: he was raving that there are "two truths! There are two types of truth, ultimate and pragmatic truth!" : but when I asked him whether the truth that there are two truths was ultimate or pragmatic, he literally started spluttering.

Another time he was arguing for the conclusion:"There is no desk!" about a desk in our class. I pointed out to him that one could do the G.E. Moore flip to his argument: and argue:

1. If buddhism is true, then there is no desk here.
2. But obviously there is a desk. It is right there.
3. Therefore Buddhism is not true.

He started frothing at that point and I haven't seen him since.

Buddhist thought has led to some pretty interesting psychological revelations.

It also offer a body of philosophy that the Analytic tradition has never been able to really move past, which is pure skepticism.

The person you're talking too doesn't sound bright but that doesn't mean the religion itself doesn't have more nuances.

Ultimately, we're all looking at the same truth and we just phrase these things badly. A lot of Western thinkers like Nietzche or Heidegger have synthesized Buddhist thought beautifully into their work.

The point of Buddhism is to move beyond your mind. The mind is the one who says "this is a desk, this is not a desk." Nature does not categorize, the mind does. Nature simply is. That's the point that you entirely missed.

That's not what emptiness and form mean. A table takes up space, but is still empty. Shave away every atom, and find me the single one that makes its it a table. When you can't, you will have found emptiness.

You know the Buddha talks about this, right? Hell, if you want something less wordy, Nagarjuna goes over literally what you're talking about here, and he (and the Buddha) agree with you completely, that the idea that because things are "empty" that they don't exist (this is annihilationism) is silly.
