Why is it that this is considered the structure of a plot but most great novels don’t follow it?
I’ve realize that most “classic” books I read do not conform to this

Depends on the classic. If it's more philosophically blunt like Plato, it will likely put forth an idea and work through it, making the shape a sort of plateau with a short introduction and conclusion. Others that are more literary and weave the philosophy/driving idea into the plot will typically follow this trend. Then there are some people who like to buck the system and put the event right at the beginning and have their character answer to the possible consequences. This occasionally results in a second peak where the protag has an enlightenment of some sort.
