Maybe start with just one book and see what happens from there.

I decided to go by popularity on goodreads so the most important works are read first. I skipped the most popular book, harry potter and the philosopher's stone, because I didn't have it and the libraries are closed. The second book is 1984. It kind of sucks, but I have to read it to get it out of the way and stuff.

read more than one book at the same time, read 20 pages each day and you'll end before you know it, if you can read mor than 20 each day then do so

Think about what you want to accomplish and why. Do you want to understand philosophy, poetry, theology, etc, or do you just enjoy Stories. Overloading yourself with thousands of books with no goal will be more harmful than anything, and you will lose momentum.

I'm just reading for personal pleasure. I like just anything that's well written and interesting. I read some classics in uni so I'm probably more well read than the average person, but there are still a lot of books I want to check out.

That's very good and I hope university goes well for you. If you just want to read for pleasure try finding a theme that interests you and build out from there. Like French literature, or Romanticism literature, or a particular author and read a couple of books that go together and then reevaluate.

Is there any good place I could read up on the different themes/type of literature there are to have options of what to look at first

I recommend potentially looking at university reading lists for or asking around /lit/. Or think back on what some of your favorite books are or books you really want to read. Also You don't have to read everything in a category if you get bored you can switch it up.
