I don't know how J.A. Baker's The Peregrine wasn't the first to be recommended.

Reading it now and it's lovely. Almost the entire book is comprised of scenes that exclusively follow various birds and the ruthless hunting many of them undergo to survive. Fantastic scenes of peregrines stalking, killing, and systematically devouring other birds. Even though humans are hardly present, it's one of the most violent and brutal books I have read in a long time.

Aubrey-Maturin series has quite a bit about birds in. Dr. Maturin is a naturalist and very fond of bustards. Cormorants and albatrosses also make appearances.
