Go to libgen and search for either Wheelock or Lingua Latina Per Se Illustrata (or buy the physical book). Either one will have you ready to tackle on poetry/prose once you finish them. Wheelock is more grammar intensive whereas Lingua Latina has an easier entry.
For Greek, I used Athenaze but I'm sure some other anons can give you other examples.

Lastly, you should be able to read poetry in maybe 6 months to a year depending on hard you apply yourself. Good luck, and remember start off easy, don't overwhelm yourself with trying Virgil or Ovid. The Vulgate is a much better starting text: http://www.latinvulgate.com/
