Considering the fact that ASOIAF is constructed for plotfag tastes and everything is building up to an exciting ending... yeah, I would say that not finishing the books at all is pretty bad.
Something like Proust's In Search of Lost Time would probably function very well even if you kicked out the last two books (I wouldn't know for 100%, because I've only read the first book and enjoyed it just a lot as it is).
