Do I go with the Costello or the Noori translation?

I'm very much interested in Iranian lit as well, but I've never gotten further than the blind owl when it comes to the modernists (I read costello I think, it was fine, but I can't compare)

Depends on what you're looking for. If you'd like something mystical, Rumi. Khayyam's poetry is also philosophical but more this-worldy and "Epicurean" rather than mystical. Shahname is also amazing which is Iran's national epic. I would have recommended Hafez as well but I'm not sure if there is a decent translation.

Actually Farsi is a much easier language to learn than people think, because the grammar is simple, plus no thousands of uintelligible regional dialects like Arabic. It's easier to learn than Spanish, German, etc. The most difficult part is the Arabic alphabet.

No language is 'easier' as such. It depends entirely what your native language is; German would be way easier for a Dutch person to learn and vice versa.
The word order is also different in Farsi from Spanish, German, Italian, French, etc.

No, not really. Indo-European is such a broad classification that it really doesn't mean a language is 'easier' to learn. When compared to something like Arabic, sure, but only then.
