Most information for science is best organized in textbooks, however if you're looking for more prose versions, there's plenty of lectures that are quite interesting. I'll try and think of some that I have read/listened to over the years. You could ask /sci/ for a recommended reading list, as well. I think their sticky has a link to several concepts relevant to what you may be seeking.
