I would suggest “On the Genealogy of Morals”. Unlike most of his other works it is not a collection of aphorisms, nor an epic like “Zarathustra”, but consists instead of 3 essays in which he systematically expounds his moral philosophy. It also belongs to the “last” period of his writings, so the thoughts expressed therein are definitely representative of the mature themes for which he is remembered.
